Spinach Lasagna Recipe

Ingredients

 20 lasagna noodles
 2 tbsp olive oil
 1 cup chopped onion
 1 tbsp garlic, minced
 2 cups fresh spinach
 3 cups ricotta cheese
 2/3 cup goat cheese
 1 tsp dried oregano
 1 tsp dried basil
 1 egg
 3 cups shredded mozzarella cheese
 3 cups tomato sauce
 1 cup parmesan cheese

Directions

Preheat oven to 350 degrees.

Cook lasagna noodles in salted water until al dente. Drain and set aside.

Cook onions and garlic in the olive oil for five minutes.

Boil the spinach for 5 minutes, drain, and chop.

Combine the ricotta, spinach, goat cheese, oregano, basil, and egg. Stir to combine.

Lay five lasagna noodles at the bottom of a 9 x 13 dish. Spread one-third of ricotta mixture over noodles. Sprinkle 1 cup mozzarella, 1 cup tomato sauce, and 1/3 cup parmesan cheese over the mixture. Repeat two more times.

Cover with aluminum and bake for 1 hour. Let cool before serving.
