Tapioca Powder

Tapioca powder is a starchy flour made from the root of the cassava plant. It is used as a thickening agent in cooking and baking. Tapioca powder becomes gelatinous when cooked, making it useful for thickening soups, sauces, pies, puddings. It has no flavor or taste on its own so takes on the flavors of other ingredients. Tapioca powder must be heated to activate the gelling properties.
